- 1 cup Cashews
- 3/4 cup water
- 1 large garlic clove
- 2 tsp salt
- 1 lb extra firm tofu
- honey (optional)
- cinnamon (optional)
- Blend cashews with enough water to cover the nuts. Start at low speed, and raise speed to get creamy texture
- Chop garlic and add with salt to blender. Blend all at high speed. Add water if needed to give it a creamy texture.
- In a separate bowl, crumble or mash the tofu. Add the other creamed ingredients to the bowl of tofu and stir until it has the appearance of cottage cheese. Add more salt to taste if desired.
- If you are making a dessert blend, add the honey and cinnamon. Refrigerate until needed for other recipes.
