Tastes like a mix between whip cream and frosting.
Use Earth Balance Buttery Spread Soy Butter and Crisco Shortening, and use Rice Flour for the flour. The ingredients sound funny, but this a fabulous substitute. Make sure to mix well to dissolve the sugar.
- 1/2 C soy margarine spread
- 1/2 C shortening
- 3/4 C castor sugar
- 3/4 Cup soy milk
- 4-1/2 Tbl flour (can use rice flour)
- 1/4 C hot soy milk
- 1 tsp vanilla (or other flavor)
- dash salt
Cream butter, shortening and sugar together until super creamy. Slowly add 1/4 Cup hot water and beat for 4 minutes. On stove, mix flour and milk together so there aren't any lumps. Bring to a boil and stir until it starts to thicken. Pour into the butter mixture and beat for 3 minutes. Add vanilla and salt and beat 2 minutes more.
This keeps in the fridge for about a week.
