Bacon-n-egg-muffin

Serve piping hot over "buttered" English muffins.

Ingredients Edit

  • 1/2 lb very fresh tofu, mashed (waterpacked type,

medium or firm)

  1. In a bowl, mix mashed tofu, nutritional yeast,

Ener-G, and soymilk.

  1. Heat 1 Tbs margarine in a large, heavy frying pan.
  2. Add soy Sausage, and saute` until golden.
  3. Add tofu mixture, and cook, stirring constantly,

until mixture thickens somewhat, and resembles scrambled eggs.

  1. Add cheeze and stir until mixed/melted.
  2. Add salt and pepper to taste
